Our story

We absolutely love seafood but don’t feel good eating it

We absolutely love seafood but don’t feel good eating it

Our love for seafood sent us on a quest to understand what we eat on a molecular level. Why does salmon taste like salmon, and not like tuna, and vice versa? We took apart the whole fillet into its separate components; muscle fibers, connective tissue, and fat cells. We realized that even though the majority of what we eat is muscle, the real power lies in the small number of fat cells. These cells bring the flavor, aroma, and mouthfeel we know and love.

So we figured: why not use their power to make seafood in a whole new way?

Cultivating the fat cells, allows us to combine our passion for biology with food. At the end of the day, we are an enthusiastic, and optimistic group of people, who are hell-bend on catalyzing this industry.
